Ingredients for 2 people:
100 g carrots, finely diced
100 g courgettes, finely diced
50 g aubergines, finely diced
1 clove garlic, chopped
Extra virgin olive oil
Salt, pepper
3 tablespoons of fried tomato sauce
400 g cooked lentils
Thyme
Cumin
Salt, pepper
½ measure of lentil cooking water or vegetable stock (blue cup)
Preparation:
Place the vegetables in the rice cooker with the garlic and olive oil. Season with salt and pepper. Close the lid, press Cook and leave to cook for 7 minutes.
Optionally, blend the vegetables.
Open the lid and add the rest of the ingredients. Replace the lid, press Cook and leave to cook for 10 minutes.
